POP TARTS

 i’ve been on a really great ‘i want to homemake junk foods i ate as a kid’ kick lately. though i will say poptarts were always hit or miss. my brother used to throw back cinnamon and smore ‘tarts like it was nothing, but those just made me kinda queezy… they still do. for my own poptarts, i naturally decided to go pretty plain. and by plain i mean decadent grown-up delicious flaky pastry tart. 

D’oh!: 

3/4 c. wheat flour 

1 1/4 c. all-purpose flour

1 tbs. sugar

1 tsp. salt

2 sticks of unsalted butter (WARNING: not for the faint of heart)

1 egg

2 tbs. milk (i used almond)

filling: 

3 tbs of your favorite jam 

2 tbs water

1 tsp cornstarch or flour

begin by sifting both flours into one bowl, then add sugar and salt. cut butter into chunks, and add with egg and milk to the flour mixture. 

using a fork, cut the butter until the dough is raggy like so:

then use your hand and knead until combined. 

roll out on a very well floured surface. i don’t own a rolling-pin, so i used a wine bottle. once you’re dough is about 1/8” thick, use a pizza cutter to cut 3x5” rectangles (it’s okay if they’re a little uneven). 

whisk together all ingredients for the filling until smooth. place one rectangle of dough on a buttered cookie sheet, and fill with a heaping tablespoon of filling.

poke a few holes in another rectangle, then place it on top. seal the edges with your fork. repeat until all your rectangles/filling is gone! and cook at 350 degrees until golden brown. 

perfect poptarts: these are deeeelicious and super easy. mostly i just think about bringing these to a show instead of cupcakes or cookies. i’ll probably do that next time. if you want these to be EXTRA golden brown, brush some egg on them before cooking!
