CINNAMON CRUNCH BREAD

as my first recipe back, i wanted to make something that would require no trip to the grocery store. or (at the very least) just a really quick one. 

SUGAH

cinnamon is one of my favorite ingredients! i say that a lot but i’m very serious about this one. i’ve been in the habit of eating it every day (homemade oatmeal is where it’s aaaaat). it’s supposed to be real good for digestion plus it’s scent is naturally calming… which i can attest to. my apartment smelt fantastic which made this snowy sunday morning incredibly bearable. if you have all the ingredients, it will be on your breakfast plate in less than an hour…

SHORTENIN'

1/4 c. shortening

1/4 c. yogurt (whatever flavor you have lying around, unless it’s lime or somethin’ crazy)

1 c. milk (i used soy)

2 eggs

1 tsp. vanilla

1 c. sugar

2 c. flour

1 tsp. baking powder

1 tsp. baking soda

CINNAMON/SUGAH

topping: 

1/2 c. brown sugar 

1 tbs. cinnamon 

1/8 tsp. nutmeg

STIRRRRR

preheat your oven to 350 degrees. in a large bowl, whisk together first 6 ingredients until smooth. sift in flour, powder and soda, then stir until batter is completely blended. 

SWIRL.

pour batter into a buttered baking dish (I used a loaf pan, but you could also use a 9x9!). quickly stir together cinnamon topping, then pour 3/4 on top. using a knife, give the batter a few swirls then top with remaining sugar/cinnamon. bake for 40+ minutes or until a knife comes clean.

most of the time i get really lazy and dont, but when i do i find stuff like this. this, my friends, is bad and will make your bread suck. you can get a sifter like this at the dollar store. for… a dollar. so get one! ANYWAYS, this was delicious and really easy and made my whole street smell fantastic. honestly, you can use as much cinnamon/brown sugar as you want (the more the merrier, amiright?)! the loaf is super dense, so prepare to feed a lot of people… or eat it for many days straight.
